Friends, Beer, and Purpose: Inside Legion Brewing’s Culture in Charlotte
On June 18th, we hosted an unforgettable Beer Dinner at our Plaza Midwood taproom – an elevated evening where culinary creativity met craft beer in perfect harmony. Led by Head Chef Chad McMullen, guests enjoyed a multi-course menu thoughtfully paired with in-house brews. With each course, Head Brewer Scott Griffin introduced the beer pairing, offering insight into the inspiration and brewing behind each pour. It was more than just dinner – it was a full sensory experience rooted in craftsmanship, connection, and Campfire Hospitality.
At Legion, we believe food and beer are both art forms. Just like our beer is brewed with care, intention, and local flavor, our food reflects the same philosophy. From sourcing quality ingredients to matching flavor profiles with precision, these pairings were built to celebrate the best of both our kitchen and brewhouse.
The Menu + Pairings
First Course
Tuna Ceviche Old Fashioned → Paired with Creative Juices IPA
A citrusy start with tropical hops and clean, refreshing flavor.
Second Course
Pork Belly & Grits → Paired with Penguin Pils
Crispy, rich pork balanced by the clean, crisp finish of our pilsner.
Third Course
Cowboy Ribeye with Haricots Verts & Corn Pudding → Paired with WHOA! Amber Lager
Big, bold, and comforting with a malty lager to match.
Fourth Course
S’mores Sundae → Paired with Sláinte Stout
Fluffy marshmallow ice cream, graham crackers, chocolate sauce, and a toasted marshmallow on top – made even richer with a smooth, roasted stout.

This event was a true reflection of who we are. We’re not here to chase trends — we’re here to craft what feels right. From the brewhouse to the kitchen, everything we make is built on instinct, care, and local flavor. Whether it’s hops, herbs, or hospitality, we treat each ingredient with purpose and pour that same attention into every dish and every glass. Our beer dinner was built to highlight the celebration of pairing well, slowing down, and of enjoying bold flavors in good company.
